Hire waiters and line cooks, you cannot run a restaurant all by yourself. Select your personnel wisely by checking both technical and moral skills. Assign cooks to the proper station, depending on their capabilities and your needs in the kitchen. Soft skills influence how they react to unexpected events and to your discipline. Experience affects performance, while morale affects loyalty. It is easy to find good workers, it is harder to keep them.

Hire an HR manager if you do not want to deal with all of that… but delegating it all may hide pitfalls.

Get your finances in order, running a restaurant is a difficult business and must be profitable too. If you need a cash injection, you can look for partners or for a loan.

Fast food, casual or fine dining, no matter what style you pick, the final aspiration of any chef is to run a starred restaurant. Quality and consistency will get you VIP guests, that will boost your reputation and allow you to be visited by an inspector… but nobody knows when this will happen!
